  • 1.5 pounds boneless, skinless chicken breasts
  • 2 chipotle peppers in adobo sauce plus 1 tablespoon adobo sauce
  • 1/2 cup ranch dressing (120 ml)
  • 2 garlic cloves, minced
  • Juice of 1 lime
  • 1.5 cups cooked white or brown rice (300 g)
  • 1 cup black beans, drained and rinsed (170 g)
  • 1 cup shredded cheddar or Monterey Jack cheese (115 g)
  • 1 cup chopped romaine or iceberg lettuce (50 g)
  • 1/2 cup diced tomatoes (80 g)
  • 1/4 cup diced red onion (40 g)
  • 2 tablespoons chopped fresh cilantro
  • 4 large flour tortillas (10-inch / 25 cm)
  • 2 tablespoons olive oil (30 ml)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Marinate the Chicken (at least 30 minutes): In a bowl, blend chipotle peppers, adobo sauce, ranch dressing, minced garlic, lime juice, olive oil, salt, and pepper. Toss chicken breasts in marinade, cover, and refrigerate for at least 30 minutes (up to 2 hours for best flavor).
  2. Preheat the Grill: Heat grill or grill pan to medium-high (around 400°F / 200°C). Lightly oil the grates.
  3. Cook the Chicken (10-12 minutes): Grill chicken for 5-6 minutes per side until internal temperature reaches 165°F (74°C). Let rest for 5 minutes, then slice thinly against the grain.
  4. Prepare the Rice & Beans: Mix cooked rice with drained black beans, salt, and pepper in a bowl.
  5. Prep Your Veggies: Chop lettuce, tomatoes, red onion, and cilantro; set aside.
  6. Warm the Tortillas: Wrap each tortilla in a damp paper towel and microwave for 20-30 seconds or warm on grill for about 15 seconds per side.
  7. Assemble the Burritos: Lay a tortilla flat, add a scoop of rice and beans, then layer sliced chicken, veggies, and shredded cheese. Avoid overfilling.
  8. Roll it Up: Fold sides in and roll tightly from one end to the other. Wrap in foil if desired.
  9. Optional Final Grill: Place wrapped burritos on grill for 2-3 minutes per side for a crispy finish and melted cheese.
  10. Serve and Enjoy: Slice in half if desired and serve.
