- 1/2 cup Greek yogurt (full-fat)
- 4 large garlic cloves, minced
- 2 teaspoons ground cumin
- 1 1/2 teaspoons ground coriander

- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh lemon juice

- 1/2 cup mayonnaise
- 1/4 cup plain Greek yogurt
- 3 large garlic cloves, finely minced or grated
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1–2 tablespoons water
- 4 large pita breads or flatbreads
- Fresh vegetables: shredded lettuce, sliced tomatoes, cucumbers, red onions
- Pickles (optional)
- A handful of fresh parsley or cilantro, chopped
Instructions
- Marinate the Chicken: In a large bowl, combine Greek yogurt, minced garlic, ground cumin, coriander, smoked paprika, turmeric, cinnamon, salt, pepper, lemon juice, and olive oil. Add chicken thighs and coat thoroughly. Cover and refrigerate for at least 30 minutes, preferably overnight.
- Prepare the Garlic Sauce: Whisk together mayonnaise, Greek yogurt, grated garlic, lemon juice, and salt in a small bowl. Add water one tablespoon at a time until smooth and pourable. Cover and chill until serving.
- Cook the Chicken: Heat a large skillet over medium-high heat with a drizzle of olive oil. Add marinated chicken thighs in a single layer. Cook 6-8 minutes per side until browned and cooked through (internal temp 165°F). Let rest 5 minutes, then slice thinly against the grain.
- Warm the Pita Bread: Warm pita or flatbreads in a dry skillet over low heat for 2 minutes or wrap in foil and heat in a 350°F oven for 5 minutes until soft and pliable.
- Assemble the Wraps: Spread a generous spoonful of garlic sauce on warm pita. Add fresh veggies, pickles if using, sliced chicken, and sprinkle with parsley or cilantro. Roll up tightly and serve.
