Ingredients

  • 1 lb (450 g) 80/20 ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 14.5 oz (400 g) canned diced tomatoes, no-salt-added
  • 2 tbsp tomato paste
  • 1 cup (240 ml) beef broth
  • 1 can (15 oz / 425 g) kidney beans, drained and rinsed (optional)
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 tsp dried oregano
  • 1/4 tsp ground cinnamon
  • Salt, to taste
  • Black pepper, to taste
  • 1 tbsp olive oil
  • Optional toppings: shredded cheddar, sour cream, chopped green onions, fresh cilantro

Instructions

  1. Preheat a large heavy-bottomed pot or Dutch oven over medium heat. Dice onion and green pepper, mince garlic.
  2. Add olive oil to the pot. Sauté diced onion, green pepper, and a pinch of salt until softened and fragrant, about 5 minutes. Add garlic and cook for 30 seconds.
  3. Push veggies to the side and add ground beef. Break up with a spoon and cook until no pink remains and beef starts to brown, about 7-10 minutes.
  4. Stir in tomato paste, chili powder, cumin, smoked paprika, cayenne, oregano, cinnamon, salt, and pepper. Cook for 1-2 minutes, stirring constantly.
  5. Pour in beef broth and canned diced tomatoes with juices. Stir well, scraping bottom of pot.
  6. Reduce heat to low and simmer uncovered or partially covered for 45-60 minutes, stirring every 10 minutes. Add more broth or water if chili thickens too much.
  7. During last 10 minutes, stir in drained kidney beans if using to warm through.
  8. Taste and adjust seasoning with salt, pepper, or cayenne as desired before serving.
