- 1 lb (450 g) 80/20 ground beef
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 medium green bell pepper, diced
- 14.5 oz (400 g) canned diced tomatoes, no-salt-added
- 2 tbsp tomato paste
- 1 cup (240 ml) beef broth
- 1 can (15 oz / 425 g) kidney beans, drained and rinsed (optional)
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 1 tsp smoked paprika
- 1/4 tsp cayenne pepper
- 1 tsp dried oregano
- 1/4 tsp ground cinnamon
- Salt, to taste
- Black pepper, to taste
- 1 tbsp olive oil
- Optional toppings: shredded cheddar, sour cream, chopped green onions, fresh cilantro
Instructions
- Preheat a large heavy-bottomed pot or Dutch oven over medium heat. Dice onion and green pepper, mince garlic.
- Add olive oil to the pot. Sauté diced onion, green pepper, and a pinch of salt until softened and fragrant, about 5 minutes. Add garlic and cook for 30 seconds.
- Push veggies to the side and add ground beef. Break up with a spoon and cook until no pink remains and beef starts to brown, about 7-10 minutes.
- Stir in tomato paste, chili powder, cumin, smoked paprika, cayenne, oregano, cinnamon, salt, and pepper. Cook for 1-2 minutes, stirring constantly.
- Pour in beef broth and canned diced tomatoes with juices. Stir well, scraping bottom of pot.
- Reduce heat to low and simmer uncovered or partially covered for 45-60 minutes, stirring every 10 minutes. Add more broth or water if chili thickens too much.
- During last 10 minutes, stir in drained kidney beans if using to warm through.
- Taste and adjust seasoning with salt, pepper, or cayenne as desired before serving.
