- 2 medium zucchini, sliced
- 8 ounces mushrooms, sliced
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Wash and slice the zucchini, mushrooms, and onion. Mince the garlic.
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced zucchini, mushrooms, and diced onion to the skillet. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender.
- Stir in the minced garlic and dried thyme. Season with salt and pepper to taste.
- Continue to sauté for 2-3 more minutes, until the garlic is fragrant.
- Serve the sautéed zucchini, mushrooms, and onions warm as a side dish.
