- 8 slices white sandwich bread, crusts removed
- 8 ounces (225g) breakfast sausage links or patties
- 3 large eggs, room temperature
- 1 teaspoon ground cinnamon
- Maple syrup, for serving (optional)
Instructions
- Cook the breakfast sausage in a skillet over medium heat until browned and cooked through, about 7-8 minutes for links or until broken into small pieces for patties. Drain excess grease and let cool slightly.
- Trim crusts off bread slices and gently flatten each slice with a rolling pin or hands to prevent cracking.
- Place a cooked sausage link or small log of crumbled sausage at the edge of each flattened bread slice. Roll tightly and set seam side down on a plate.
- Whisk together eggs and cinnamon in a mixing bowl until fully combined.
- Heat 1 tablespoon butter in a non-stick skillet over medium heat. Dip each roll up in the egg mixture, coating all sides, then place seam side down in the skillet.
- Cook, turning occasionally, until all sides are golden brown and egg is cooked through, about 8 minutes total.
- Transfer roll ups to a paper towel-lined plate to drain excess butter. Serve warm with maple syrup or preferred dipping sauce.
