  • 8 ounces (225g) breakfast sausage links or patties
  • 3 large eggs, room temperature
  • 1 teaspoon ground cinnamon

Instructions

  1. Cook the breakfast sausage in a skillet over medium heat until browned and cooked through, about 7-8 minutes for links or until broken into small pieces for patties. Drain excess grease and let cool slightly.
  2. Trim crusts off bread slices and gently flatten each slice with a rolling pin or hands to prevent cracking.
  3. Place a cooked sausage link or small log of crumbled sausage at the edge of each flattened bread slice. Roll tightly and set seam side down on a plate.
  4. Whisk together eggs and cinnamon in a mixing bowl until fully combined.
  5. Heat 1 tablespoon butter in a non-stick skillet over medium heat. Dip each roll up in the egg mixture, coating all sides, then place seam side down in the skillet.
  6. Cook, turning occasionally, until all sides are golden brown and egg is cooked through, about 8 minutes total.
