Description

A quick and saucy 15-minute beef udon noodle bowl loaded with tender steak, colorful veggies, and a glossy savory sauce. This easy weeknight dinner is family-friendly and customizable.


Ingredients

  • 2 packets udon (frozen or fresh cooked)
  • 1012 oz thinly sliced steak (ribeye, sirloin, flank, shaved beef)
  • 1 tbsp avocado oil or ghee
  • ½ small yellow onion (thinly sliced)
  • 2 cloves garlic (minced)
  • 1 tsp grated ginger
  • 1 cup shredded green cabbage
  • 1 cup sliced mushrooms (shiitake or cremini)
  • ½ red bell pepper (thinly sliced)
  • 23 scallions (sliced)
  • 3 tbsp coconut aminos or soy sauce
  • 2 tbsp hoisin
  • 1 tbsp rice vinegar
  • 1 tbsp coconut sugar
  • 12 tsp chili crisp or sriracha
  • ¼ cup noodle water or broth
  • Sesame seeds
  • Extra chili crisp
  • Lime wedge

Instructions

  1. Bring a small pot of water to a boil. Cook udon 1–2 min until loosened. Reserve a splash of water, drain, and set aside.
  2. Heat oil in a large skillet over medium-high. Add steak in an even layer and sear 1–2 min per side until just browned. Remove and set aside.
  3. In the same skillet, add mushrooms, onion, and bell pepper. Cook 2–3 min until softened. Add cabbage and scallion whites and cook 1–2 min more. Add garlic and ginger and sauté 30 seconds.
  4. Lower heat to medium. In a small bowl mix together coconut aminos, hoisin, rice vinegar, coconut sugar, and chili crisp. Then add into the skillet and stir until glossy and bubbling.
  5. Add udon and steak back in. Toss until coated and saucy, adding noodle water to loosen as needed.
  6. Top with scallion greens, sesame seeds, and more chili crisp.
