Description
This Sardine and Potato Bake with Herbs and Olive Oil combines creamy potatoes and tender sardines for a comforting dish that’s perfect for busy evenings.

- 3 medium potatoes (cut into thin slices)
- 2 cans sardines in olive oil
- 3 tbsp extra virgin olive oil
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tsp sea salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- 1 tsp dried oregano or thyme
- 2 tbsp chopped fresh parsley
- ½ lemon zest (optional)
Instructions
- Preheat the oven to 190°C (375°F) and lightly grease a medium baking dish with olive oil.
- Peel and slice the potatoes thinly, about ⅛ inch thick.
- Arrange half of the potato slices on the base of the dish. Season them with sea salt, black pepper, and a drizzle of olive oil.
- Spread half of the sardines evenly over the potatoes. Then sprinkle the chopped onion, minced garlic, and smoked paprika.
- Layer the remaining potatoes on top, followed by the rest of the sardines.
- Drizzle the remaining olive oil over the entire dish, and sprinkle dried oregano, fresh parsley, and the optional lemon zest on top.
- Cover the baking dish loosely with foil and bake for 25 minutes.
- Remove the foil and bake another 15–20 minutes until the top is golden and crisp.
- Garnish with fresh parsley before serving.
