Description

This Sardine and Potato Bake with Herbs and Olive Oil combines creamy potatoes and tender sardines for a comforting dish that’s perfect for busy evenings.


Ingredients

  • 3 medium potatoes (cut into thin slices)
  • 2 cans sardines in olive oil
  • 3 tbsp extra virgin olive oil
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tsp sea salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • 1 tsp dried oregano or thyme
  • 2 tbsp chopped fresh parsley
  • ½ lemon zest (optional)

Instructions

  1. Preheat the oven to 190°C (375°F) and lightly grease a medium baking dish with olive oil.
  2. Peel and slice the potatoes thinly, about ⅛ inch thick.
  3. Arrange half of the potato slices on the base of the dish. Season them with sea salt, black pepper, and a drizzle of olive oil.
  4. Spread half of the sardines evenly over the potatoes. Then sprinkle the chopped onion, minced garlic, and smoked paprika.
  5. Layer the remaining potatoes on top, followed by the rest of the sardines.
  6. Drizzle the remaining olive oil over the entire dish, and sprinkle dried oregano, fresh parsley, and the optional lemon zest on top.
  7. Cover the baking dish loosely with foil and bake for 25 minutes.
  8. Remove the foil and bake another 15–20 minutes until the top is golden and crisp.
  9. Garnish with fresh parsley before serving.
