Instructions

- Beat in the two large eggs one at a time, then stir in the vanilla extract.
- Mix together the flour, baking soda, and salt in a separate bowl.
- Blend the dry ingredients gradually into the creamed mixture until just combined.
- Fold in the toffee bits, chopped pistachios, and chocolate chips gently.
- Scoop rounded tablespoons of dough onto ungreased baking sheets.
- Bake for 10-12 minutes or until the edges are golden brown.
- Cool the cookies on the baking sheets for a few minutes before transferring them to wire racks.
