Ingredients

  • 2 cups chopped turnip greens, washed and tough stems removed
  • 1 cup diced turnips, peeled and chopped into ½-inch cubes
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 cup chopped potatoes
  • 1 cup chopped parsnips (optional)
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 8 oz Conecuh sausage, sliced (or your preferred smoked sausage)
  • ¾ cup long grain white rice, uncooked
  • 6 cups chicken broth (or vegetable broth for vegetarian)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (optional)
  • 1 teaspoon crushed red pepper flakes (optional)
  • Fresh thyme or rosemary sprigs (optional)

Instructions

  1. Heat olive oil in a large Dutch oven or stock pot over medium heat. Add sliced sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
  2. In the same pot, add chopped onion, carrots, and celery. Sauté for 5-6 minutes until softened. Add minced garlic and smoked paprika, cook for 1 minute more.
  3. Add diced turnips, potatoes, and parsnips to the pot. Stir to coat vegetables with seasonings. Pour in chicken broth and bring to a gentle boil.
  4. Reduce heat to low, add uncooked rice, and return the cooked sausage to the pot. Cover and simmer for 25-30 minutes, stirring occasionally, until rice is tender and root vegetables are soft.
  5. Add chopped turnip greens during the final 10 minutes of cooking. Stir until wilted.
  6. Taste and adjust seasoning with salt, pepper, and apple cider vinegar if desired.
  7. Ladle the rustic turnip green soup into bowls and serve hot.
