- 8 ounces cremini or white mushrooms, sliced
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 4 cups chicken broth
- 1 cup half-and-half
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Remove skin and bones from rotisserie chicken, shred meat into bite-sized pieces and set aside.
- Heat butter or olive oil in a large pot over medium heat. Add chopped onion and cook for 4–5 minutes until softened.
- Add garlic and mushrooms. Sauté for 6–8 minutes until mushrooms release moisture and begin to brown.
- Sprinkle flour over the vegetables, stir to coat, and cook for 1–2 minutes.
- Pour in chicken broth gradually while stirring. Scrape the bottom of the pot to deglaze and bring to a simmer.
- Stir in shredded chicken. Simmer soup for 10–15 minutes to allow flavors to blend.
- Reduce heat and add half-and-half. Warm gently without boiling for 3–4 minutes.
- Season with salt and black pepper to taste. Stir in chopped parsley and serve hot.
