Description

A quick and easy 3-ingredient Rotel Dip recipe. This creamy, cheesy dip uses ground beef, Velveeta cheese, and Rotel tomatoes. It’s perfect for parties and game days.


Ingredients

  • 1 10-ounce can Rotel tomatoes, undrained
  • 16 ounces Velveeta cheese, cut into cubes

Instructions

  1. Stovetop Method: In a large pot over medium heat, cook ground beef until browned. Drain excess grease. Add undrained Rotel and cubed Velveeta. Reduce heat to medium-low and stir frequently until melted and smooth. Transfer to a serving bowl.
  2. Crockpot Method: Brown ground beef in a skillet and drain fat. Place cooked beef, undrained Rotel, and cubed Velveeta into a slow cooker. Cover and cook on low for 1-2 hours, stirring occasionally, until smooth and creamy. Keep on warm setting for serving.

  • Serve warm with chips, vegetables, or your favorite dippers.
