- 2 tbsp unsalted butter
- 2 1/4 tsp active dry or instant yeast
- 1 1/2 tbsp granulated sugar
- 1/4 cup lukewarm milk
- 2 cups all-purpose flour
- 1 whole egg
- 1/2 cup pumpkin puree
- 3/4 tsp salt
- 1 1/2 tsp dried rosemary
- 3/4 tsp ground cardamom
- 1 whole egg (for wash)
- 1 tbsp milk or water (for wash)
Instructions
- Begin by melting the unsalted butter in a light-colored pan over medium heat. Whisk constantly until it turns golden brown and releases a nutty aroma. Transfer it to a heat-proof container and allow cooling.
- In your stand mixer bowl, combine the active dry yeast, granulated sugar, and lukewarm milk. Let it sit for about 5-10 minutes until it foams up and looks lively.
- Add the cooled brown butter, all-purpose flour, egg, pumpkin puree, salt, dried rosemary, and ground cardamom to the yeast mixture. Knead the dough on medium-low speed for about 20-25 minutes until it pulls away from the sides of the bowl.
- Cover the bowl with a clean kitchen towel and let the dough proof in a warm spot for 45 minutes to 1 hour, or until it has doubled in size.
- Lightly grease a baking tin. Transfer the dough onto a floured surface, divide it into 8 equal pieces, and shape each piece into a smooth round ball. Arrange the rolls in the prepared baking tin.
- Cover the baking tin and let the rolls proof for another 45 minutes to 1 hour. Just before they finish rising, preheat your oven to 375°F.
- In a small bowl, beat together the egg and milk for the egg wash. Brush this mixture generously on the tops of the rolls to ensure a beautiful golden brown finish.
- Place the tin in the preheated oven and bake for 20-25 minutes. They should be golden brown and sound hollow when tapped.
- Allow the rolls to cool in the tin for a few minutes before gently removing them and serving warm.
