- 2 large sweet potatoes, washed and scrubbed
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- ¾ cup crumbled feta cheese
- ¼ cup honey
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Carefully slice the washed sweet potatoes into ½-inch thick rounds.
- In a large bowl, combine the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika. Toss well.
- Lay the seasoned sweet potato slices in a single layer on the prepared baking sheet.
- Place the baking sheet in the preheated oven and roast for 25-30 minutes, turning halfway through.
- Remove the sweet potatoes from the oven and allow them to cool for a few minutes.
- Transfer the roasted sweet potato rounds to a serving platter.
- Sprinkle crumbled feta cheese over the warm sweet potato rounds.
- Drizzle the sweet potatoes with honey and garnish with freshly chopped parsley.
- Serve warm or at room temperature.
