Mouthwatering Roasted Lamb Shanks
Ingredients

- 2–4 lamb shanks
- 2 tbsp olive oil
- 6 garlic cloves (whole)
- 4 sprigs fresh rosemary
- 2 cups beef broth (low-sodium)
- 2 carrots (chopped)
- 1 onion (chopped)
Instructions
- Preheat your oven to 325°F (160°C).
- In a large Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper. Sear each side until browned (about 3-4 minutes per side). Remove from pot and set aside.
- Add chopped onions and carrots along with whole garlic cloves to the pot. Sauté until fragrant, about 5 minutes.
- Pour in beef broth until it nearly covers the vegetables. Return lamb shanks to the pot and add fresh rosemary sprigs.
- Cover and transfer to preheated oven. Roast for about 2.5 hours or until fork-tender.
- Plate the lamb shanks and drizzle with sauce. Pair with creamy mashed potatoes or crusty bread.
