Ingredients

  • 24 lamb shanks
  • 2 tbsp olive oil
  • 6 garlic cloves (whole)
  • 4 sprigs fresh rosemary
  • 2 cups beef broth (low-sodium)
  • 2 carrots (chopped)
  • 1 onion (chopped)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a large Dutch oven, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper. Sear each side until browned (about 3-4 minutes per side). Remove from pot and set aside.
  3. Add chopped onions and carrots along with whole garlic cloves to the pot. Sauté until fragrant, about 5 minutes.
  4. Pour in beef broth until it nearly covers the vegetables. Return lamb shanks to the pot and add fresh rosemary sprigs.
  5. Cover and transfer to preheated oven. Roast for about 2.5 hours or until fork-tender.
  6. Plate the lamb shanks and drizzle with sauce. Pair with creamy mashed potatoes or crusty bread.
