Ingredients

  • 2.75 kg Lamb leg (bone-in)
  • 1.5 tsp Cooking salt
  • 0.5 tsp Black pepper
  • 1.5 tbsp Fresh rosemary leaves (finely chopped)
  • 3 Garlic cloves (finely minced)
  • 2 tbsp Olive oil
  • 2 Whole heads of garlic (halved horizontally)
  • Few sprigs rosemary (optional)
  • 4 tbsp Flour (plain/all-purpose)
  • 2.5 cups Beef broth/stock (low sodium)

Instructions

  1. Take the lamb leg out of the fridge at least 1 hour before roasting to ensure even cooking.
  2. Preheat your oven to 240°C/475°F (220°C fan) with the oven shelf in the middle.
  3. Mix rosemary, minced garlic, and olive oil in a small bowl to form a fragrant paste.
  4. Coat the lamb leg in a roasting pan with the rub, sprinkle with salt and pepper, and place halved garlic under the lamb.
  5. Roast in the preheated oven for 20 minutes.
  6. After 20 minutes, reduce the oven temperature to 200°C/400°F (180°C fan) and roast for an additional 1 hour.
  7. Check doneness at the 45-minute mark for even cooking.
  8. Remove the lamb from the oven and let it rest loosely covered with foil for 20 minutes to 1 hour.
  9. Discard rosemary sprigs, then prepare the gravy by placing the roasting pan on medium heat.
  10. Add flour to the fat and mix, cooking for about 1 minute until combined.
  11. Pour in half of the beef stock to dissolve the bits in the pan, and add the remaining stock.
  12. Use a potato masher to mash the garlic into the gravy.
  13. Taste and season the gravy with salt and pepper as needed.
  14. Let the gravy simmer until it starts to thicken, then remove from heat.
  15. Strain the gravy into a bowl, mashing the garlic for remaining liquid, and serve.
