- 1 ½ cups whole-milk ricotta cheese
- 2 tablespoons olive oil (plus extra for drizzling)
- 1–2 tablespoons hot honey (plus extra for serving)
- ¼ teaspoon sea salt (or to taste)
- Freshly ground black pepper (to taste)
- Fresh thyme or rosemary sprigs (for garnish)
- Crushed red pepper flakes (optional)
- Toasted nuts (like almonds or pistachios), roughly chopped
- Sliced baguette or crackers (for serving)
Instructions
- Prep your ingredients: remove ricotta from the fridge 10–15 minutes before starting so it relaxes. Chop nuts and herbs; have your hot honey and olive oil ready.
- Whip the ricotta: place the whole-milk ricotta in a bowl and add 2 tablespoons olive oil. Whip until glossy and spreadable (30–60 seconds).
- Add the hot honey: fold in 1 tablespoon hot honey and taste. Adjust seasoning with salt and pepper.
- Plate and garnish: spoon the whipped ricotta into a serving dish, drizzle with olive oil and hot honey, scatter nuts, herbs, and crushed red pepper flakes.
- Serve and enjoy: offer with sliced baguette or crackers at room temperature.
