Description

A rich and delicious bisque featuring shrimp, crab, and lobster, with a creamy base and aromatic vegetables.


Ingredients

  • 1/2 lb shrimp, peeled and deveined
  • 1/2 lb crab meat
  • 1/2 lb cooked lobster meat, chopped
  • 3 tablespoons butter
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 celery stalk, diced
  • 1 carrot, diced
  • 2 tablespoons all-purpose flour
  • 2 cups seafood broth or fish stock
  • 1 cup heavy cream
  • 1/2 cup dry white grape juice
  • 1 teaspoon Old Bay seasoning
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste

Instructions

  1. Melt butter in a large pot over medium heat. Add onion, celery, and carrot, and sauté until softened, about 7-10 minutes.
  2. Add minced garlic and cook for another minute until fragrant, being careful not to burn it.
  3. Sprinkle flour over the vegetables and stir continuously for 1-2 minutes to create a roux.
  4. Gradually whisk in the seafood broth and optional white grape juice. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. Gently add the shrimp, crab meat, and lobster meat to the simmering broth. Cook for 5-7 minutes, or until the seafood is just cooked through.
  6. Reduce heat to low. Stir in heavy cream until fully incorporated. Do not boil. Add Old Bay seasoning, cayenne pepper (if using), salt, and pepper to taste. Gently heat through before serving.
