Description
A no-fuss, kid-approved holiday treat made from crisp cereal and gooey marshmallows, topped with coconut grass and candy eggs. Perfect for Easter celebrations.
Ingredients

- Nonstick cooking spray (or butter for greasing)
- 4 tablespoons unsalted butter
- 10 ounces marshmallows (regular or mini)
- 5 cups Rice Krispies cereal
- 1 ½ teaspoons vanilla extract
- ¼ teaspoon salt
- 1 cup unsweetened shredded coconut
- Green food coloring (gel or liquid)
- 48 mini eggs
Instructions
- Lightly spray two muffin tins with nonstick cooking spray and set aside.
- In a large pot over medium heat, melt 4 tablespoons of unsalted butter until fully liquid.
- Add 10 ounces of marshmallows to the pot and stir continuously until completely melted and smooth.
- Remove the pot from heat and stir in 1 ½ teaspoons of vanilla extract and ¼ teaspoon of salt.
- Add 5 cups of Rice Krispies cereal to the pot and fold gently until every piece is coated with marshmallow.
- Using a heaping ¼ cup scoop of the mixture, fill 16 muffin cups. Press the center down to create a nest cavity.
- Let the nests cool and set at room temperature for about 1 hour.
- In a large resealable bag, place 1 cup of shredded coconut and add 3–4 drops of green food coloring. Seal and shake until evenly colored.
- Spoon about 1 tablespoon of the green coconut into the center of each nest, then top each with three mini eggs.
