Reuben Balls with Spicy Thousand Island Dipping Sauce

  • 1 cup sauerkraut, drained and squeezed dry
  • 1 cup shredded Swiss cheese
  • 1/4 cup breadcrumbs
  • 2 eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 cup vegetable oil for frying
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 2 tablespoons dill pickle relish
  • 1 tablespoon white vinegar
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper

Instructions

  1. In a large bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, breadcrumbs, and beaten eggs. Mix well until fully incorporated.
  2. Scoop the mixture by the tablespoonful and roll into small balls.
  3. Dredge the balls in flour, coating them completely.
  4. In a large skillet, heat the vegetable oil over medium-high heat.
  5. Carefully add the Reuben Balls to the hot oil and fry for 2-3 minutes, turning occasionally, until golden brown.
  6. Drain the fried Reuben Balls on a paper towel-lined plate.
  7. In a small bowl, whisk together the mayonnaise, ketchup, pickle relish, vinegar, paprika, garlic powder, and cayenne pepper to make the Thousand Island dipping sauce.
  8. Serve the Reuben Balls warm, accompanied by the Thousand Island dipping sauce.
