Reuben Balls with Spicy Thousand Island Dipping Sauce

- 1 lb corned beef, finely chopped
- 1 cup sauerkraut, drained and squeezed dry
- 1 cup shredded Swiss cheese
- 1/4 cup breadcrumbs
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1 cup vegetable oil for frying
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons dill pickle relish
- 1 tablespoon white vinegar
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
Instructions
- In a large bowl, combine the chopped corned beef, sauerkraut, Swiss cheese, breadcrumbs, and beaten eggs. Mix well until fully incorporated.
- Scoop the mixture by the tablespoonful and roll into small balls.
- Dredge the balls in flour, coating them completely.
- In a large skillet, heat the vegetable oil over medium-high heat.
- Carefully add the Reuben Balls to the hot oil and fry for 2-3 minutes, turning occasionally, until golden brown.
- Drain the fried Reuben Balls on a paper towel-lined plate.
- In a small bowl, whisk together the mayonnaise, ketchup, pickle relish, vinegar, paprika, garlic powder, and cayenne pepper to make the Thousand Island dipping sauce.
- Serve the Reuben Balls warm, accompanied by the Thousand Island dipping sauce.
