A vibrant and refreshing fruit salad perfect for brightening up any meal, especially during the colder months. This salad combines sweet pineapple, tart kiwis, juicy citrus, and jewel-like pomegranate for a symphony of textures and tastes.

- 3 cups of cubed pineapple
- 1 cup of peeled, quartered and sliced kiwis
- 2 cups of mandarin orange or clementine segments
- 1/2 cup pomegranate arils
- 3 tablespoons lemon or lime juice
- 3 tablespoons honey
- 1 tablespoon poppy seeds
- Fresh mint leaves (optional garnish)
Instructions
- Prepare the pineapple by peeling, removing the core, and cutting into 1-inch cubes. Peel mandarin oranges or clementines and separate into segments, removing seeds. Place these fruits in a large mixing bowl.
- Peel kiwis, quarter them lengthwise, and slice into bite-sized pieces. Add the sliced kiwis and pomegranate arils to the bowl with the pineapple and citrus.
- In a separate small bowl, whisk together lemon or lime juice and honey until the honey is fully dissolved, creating a smooth dressing.
- Sprinkle poppy seeds over the fruit in the large mixing bowl. Pour the prepared dressing evenly over the fruit.
- Gently toss all ingredients together, being careful not to overmix, until all fruit is lightly coated with dressing. Chill for at least 15-30 minutes before serving. Garnish with fresh mint leaves if desired.
