  • 3 cups confectioners’ sugar, sifted
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable shortening (optional, for smoother melting)

Instructions

  1. In a large mixing bowl, beat together the softened cream cheese and softened unsalted butter until smooth and creamy.
  2. Add the vanilla extract to the cream cheese and butter mixture and beat until well combined.
  3. Incorporate the unsweetened cocoa powder, red food coloring, and salt. Mix on low speed initially, then increase speed.
  4. Gradually add the sifted confectioners’ sugar, beating well after each addition until fully incorporated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour.
  6. Once chilled, scoop out portions of the red velvet dough and roll into bite-sized balls.
  7. Place the rolled truffles on a baking sheet lined with parchment paper.
  8. Place the baking sheet in the freezer for about 15-20 minutes.
  9. While the truffles are chilling, melt the semi-sweet chocolate chips.
  10. Carefully remove the firmed truffles from the freezer and dip into the melted chocolate.
  11. Place the chocolate-covered truffles back onto the parchment-lined baking sheet.
  12. Let the dipped truffles sit at room temperature until the chocolate has fully set.
