Soft, tender red velvet cookies with pockets of sweet white chocolate, perfect for any occasion.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 tablespoon cocoa powder (unsweetened)
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 tablespoon red food coloring (gel preferred)
- 1 cup white chocolate chunks
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
- Cream the softened butter and sugar until light and fluffy, about 2–3 minutes.
- Add the egg and vanilla, and beat until just combined.
- In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry mixture to the butter-egg mixture, stirring until just combined.
- Stir in the red food coloring, then fold in the white chocolate chunks.
- Drop tablespoon-sized balls of dough on the prepared baking sheets, about 2 inches apart. Slightly flatten if desired.
- Bake for 10–12 minutes, until the edges are set and centers are slightly soft.
- Let cool on the baking sheet for 3–5 minutes, then transfer to a wire rack to cool completely.
