Ingredients

  • 2 lbs purple sweet potatoes, peeled and cubed
  • 1 cup granulated sugar
  • 1/4 cup water

Instructions

  1. In a large saucepan, combine the cubed purple sweet potatoes and water. Bring to a boil over high heat.
  2. Reduce heat to medium-low and simmer for 15-20 minutes, or until the sweet potatoes are very soft.
  3. Drain the sweet potatoes and mash them until smooth.
  4. Return the mashed sweet potatoes to the saucepan and stir in the sugar.
  5. Cook over medium heat, stirring frequently, for 20-25 minutes, or until the mixture has thickened to a jam-like consistency.
  6. Remove from heat and allow to cool completely before transferring to jars or containers.
