Delicious Purple Sweet Potato Jam
Ingredients

- 2 lbs purple sweet potatoes, peeled and cubed
- 1 cup granulated sugar
- 1/4 cup water
Instructions
- In a large saucepan, combine the cubed purple sweet potatoes and water. Bring to a boil over high heat.
- Reduce heat to medium-low and simmer for 15-20 minutes, or until the sweet potatoes are very soft.
- Drain the sweet potatoes and mash them until smooth.
- Return the mashed sweet potatoes to the saucepan and stir in the sugar.
- Cook over medium heat, stirring frequently, for 20-25 minutes, or until the mixture has thickened to a jam-like consistency.
- Remove from heat and allow to cool completely before transferring to jars or containers.
