- 1 medium purple sweet potato, peeled and cubed
- 2 1/4 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon granulated sugar
- 1 packet (2 1/4 teaspoons) active dry yeast
- 1/2 cup warm milk
Instructions
- Preheat your oven to 375°F (190°C).
- Place the cubed sweet potato in a pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.
- Drain the sweet potato and mash it until smooth.
- In a large mixing bowl, combine the mashed sweet potato, flour, salt, sugar, and yeast. Slowly pour in the warm milk and knead the dough until it’s smooth and elastic, about 5-7 minutes.
- Cover the dough and let it rise in a warm place for 1 hour, or until it has doubled in size.
- Punch down the dough to release any air bubbles, then divide it into 8 equal pieces. Roll each piece into a ball and place them on a parchment-lined baking sheet.
- Bake the buns for 20-25 minutes, or until they’re golden brown.
- Remove the buns from the oven and let them cool slightly before serving.
