- 1 cup dried green or brown lentils
- 3 cups water
- 1 medium cucumber, sliced
- 1 cup cherry tomatoes, halved
- 1/2 medium red onion, thinly sliced
- 1/2 cup roasted red peppers, chopped
- 1/3 cup kalamata olives, sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse the lentils well under cold water.
- Add the lentils and water to a saucepan and bring to a boil.
- Reduce the heat and simmer for 20 to 25 minutes, until the lentils are tender but still hold their shape.
- Drain the lentils and let them cool completely.
- Slice the cucumber, halve the cherry tomatoes, thinly slice the red onion, and chop the roasted red peppers, olives, dill, and parsley.
- In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper.
- Add the cooled lentils, cucumber, tomatoes, red onion, roasted red peppers, olives, dill, and parsley to a large bowl.
- Pour the dressing over the salad and toss until everything is evenly coated.
- Gently fold in the feta cheese.
- Chill for 15 to 20 minutes if desired, then serve.
