Ingredients

- 1 tbsp olive oil
- 1 lb Italian sausage, removed from casings
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 lbs potatoes, peeled and cubed
- 1 cup spinach, fresh
- Salt and pepper to taste
- Optional: 1/2 cup heavy cream
Instructions
- Heat olive oil in a large pot.
- Brown sausage, breaking it up.
- Add onion and cook until softened.
- Stir in garlic.
- Pour in chicken broth and add potatoes.
- Simmer until potatoes are tender.
- Stir in spinach until wilted.
- Season with salt and pepper.
- Optional: Stir in heavy cream.
- Serve hot.
