Delicious Potato Croquettes made from leftover mashed potatoes paired with garlic aioli make for a perfect snack or appetizer.

- 1 Egg (Beaten to bind the ingredients.)
- 0.5 cup Parmesan Cheese (Grated, fresh is best.)
- 0.25 cup Chives (Chopped, can substitute with green onions.)
- 0.5 teaspoon Salt (Enhances flavor.)
- 0.25 teaspoon Black Pepper (Adjust according to taste.)
- 0.25 cup All-Purpose Flour (Coating for crispy texture.)
- 2 Eggs (Beaten for breading.)
- 1.25 cups Panko Bread Crumbs (Offers a delightful crunch.)
- 2–4 tablespoons Vegetable Oil (Needed for frying.)
- 0.25 cup Mayo (Opt for vegan mayo for a plant-based version.)
- 1 clove Garlic (Minced for flavor.)
- 1.5 teaspoons Lemon Juice (Fresh is preferred.)
Instructions
- In a medium bowl, combine the mashed potatoes, beaten egg, Parmesan cheese, chopped chives, salt, and black pepper. Chill the mixture in the refrigerator for at least 30 minutes.
- Use a 1½ tablespoon cookie scoop to portion out the potato mixture, and gently form each scoop into disc-shaped patties.
- Arrange three shallow bowls: one with all-purpose flour, another with beaten eggs, and the last with panko breadcrumbs. Coat each patty first in flour, then dip it into the egg, and finally dredge it in breadcrumbs.
- Heat 1-2 tablespoons of vegetable oil in a large skillet over medium heat. Add the patties to the skillet, cooking for about 1-2 minutes per side until golden brown.
- In a small bowl, whisk together mayo, minced garlic, salt, and lemon juice until smooth. Adjust seasoning if necessary.
- Serve the crispy potato croquettes hot, ideally with your homemade garlic aioli on the side.
