  • 24 tablespoons Vegetable Oil (Needed for frying.)

Instructions

  1. In a medium bowl, combine the mashed potatoes, beaten egg, Parmesan cheese, chopped chives, salt, and black pepper. Chill the mixture in the refrigerator for at least 30 minutes.
  2. Use a 1½ tablespoon cookie scoop to portion out the potato mixture, and gently form each scoop into disc-shaped patties.
  3. Arrange three shallow bowls: one with all-purpose flour, another with beaten eggs, and the last with panko breadcrumbs. Coat each patty first in flour, then dip it into the egg, and finally dredge it in breadcrumbs.
  4. Heat 1-2 tablespoons of vegetable oil in a large skillet over medium heat. Add the patties to the skillet, cooking for about 1-2 minutes per side until golden brown.
  5. In a small bowl, whisk together mayo, minced garlic, salt, and lemon juice until smooth. Adjust seasoning if necessary.
  6. Serve the crispy potato croquettes hot, ideally with your homemade garlic aioli on the side.
