- 4 pounds corned beef brisket (flat or round cut)
- 1.5 cups water
- 1 medium yellow onion, thinly sliced
- 5 cloves garlic, peeled and smashed
- 12 fluid ounces lager or stout beer
Instructions
- Remove the corned beef brisket from its packaging and thoroughly rinse off the salty brine. Generously rub the contents of the included spice packet over the entire surface of the brisket. For a more robust flavor, consider preparing additional corned beef spices.
- Pour 1.5 cups of water into the Instant Pot insert. Position the trivet or cooking rack inside. Carefully place the prepared corned beef brisket on the rack, then uniformly layer the sliced onion and smashed garlic cloves over the top.
- Pour the entire 12 fluid ounces of beer over the brisket. If desired, sprinkle with additional corned beef spices. Securely lock the Instant Pot lid into place and ensure the steam release valve is set to the sealing position.
- Select the ‘Manual’ or ‘Pressure Cook’ setting on high pressure and set the cooking time for 90 minutes. Once cooking is complete, allow a natural pressure release for 10 minutes before carefully performing a quick release of any remaining pressure.
