  • 2 teaspoons sweet paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt flakes
  • 1 teaspoon freshly cracked black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons chilli paste (adjust based on spice tolerance)
  • 1 tablespoon olive oil (drizzle)
  • 1 tablespoon lemon juice
  • 2 cloves freshly minced garlic
  • 1 teaspoon freshly minced ginger
  • 1 teaspoon caster (superfine) sugar
  • to taste sea salt flakes
  • to taste freshly cracked black pepper
  • 4 pieces pita bread wraps (or any wraps you prefer)
  • 4 tablespoons whole-egg mayonnaise
  • 200 grams gouda (or any melty cheese)
  • 2 cups finely shredded iceberg lettuce
  • optional air-fryer chips (fries)

Instructions

  1. In a large bowl, combine the sliced chicken with sweet paprika, onion powder, garlic powder, sea salt, and freshly cracked black pepper. Drizzle with olive oil and toss well.
  2. Heat a large frying pan over medium-high heat and cook the chicken for 2–3 minutes on each side until golden brown and cooked through.
  3. Alternatively, preheat the air fryer to 200°C (400°F) and cook the chicken for 8–10 minutes in a single layer, turning halfway.
  4. Or grill the chicken for 2–3 minutes per side over medium-high heat for a smoky flavor.
  5. In a small bowl, combine chilli paste, olive oil, lemon juice, minced garlic, minced ginger, and caster sugar. Stir until smooth.
  6. Warm the wraps in a dry frying pan or microwave. Spread mayonnaise on each wrap, add gouda, layered chicken, shredded lettuce, chilli sauce, and more mayo. Roll tightly and serve immediately with optional fries.
