Description
Crispy Portobello Mushroom Fries are savory, crunchy, and incredibly satisfying. They are thick slices of portobello mushrooms coated in seasoned breadcrumbs and baked until golden.

- 3 large portobello mushrooms
- 1 cup all-purpose flour (120 g)
- 2 large eggs
- 1 tablespoon milk
- 1 cup panko breadcrumbs (60 g)
- 1/2 cup grated Parmesan cheese (50 g)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil or cooking spray
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or place a wire rack on top.
- Clean the portobello mushrooms with a damp paper towel. Remove the stems and slice the caps into thick fry-shaped strips.
- Place flour in one bowl. In a second bowl whisk eggs and milk together. In a third bowl combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
- Dip each mushroom strip into flour, then into the egg mixture, and finally coat with the breadcrumb mixture, pressing lightly so the coating sticks.
- Place the coated mushroom fries in a single layer on the prepared baking sheet. Lightly spray or drizzle with olive oil.
- Bake for 18–22 minutes, flipping halfway through, until the fries are golden brown and crispy.
- Serve immediately with your favorite dipping sauces such as garlic aioli, ranch, or spicy mayo.
