Description

Crispy Portobello Mushroom Fries are savory, crunchy, and incredibly satisfying. They are thick slices of portobello mushrooms coated in seasoned breadcrumbs and baked until golden.


Ingredients

  • 3 large portobello mushrooms
  • 1 cup all-purpose flour (120 g)
  • 2 large eggs
  • 1 tablespoon milk
  • 1 cup panko breadcrumbs (60 g)
  • 1/2 cup grated Parmesan cheese (50 g)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil or cooking spray

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or place a wire rack on top.
  2. Clean the portobello mushrooms with a damp paper towel. Remove the stems and slice the caps into thick fry-shaped strips.
  3. Place flour in one bowl. In a second bowl whisk eggs and milk together. In a third bowl combine panko breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.
  4. Dip each mushroom strip into flour, then into the egg mixture, and finally coat with the breadcrumb mixture, pressing lightly so the coating sticks.
  5. Place the coated mushroom fries in a single layer on the prepared baking sheet. Lightly spray or drizzle with olive oil.
  6. Bake for 18–22 minutes, flipping halfway through, until the fries are golden brown and crispy.
  7. Serve immediately with your favorite dipping sauces such as garlic aioli, ranch, or spicy mayo.
