- 4 bone-in pork chops (about 2–2.5 cm thick)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tbsp olive oil
- 4 medium potatoes (about 800 g, thinly sliced)
- 2 tbsp butter
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 2 tbsp all-purpose flour
- 1 ½ cups milk
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- ¾ tsp salt
- ¼ tsp black pepper
- ⅛ tsp nutmeg (optional)
Instructions
- Preheat oven to 180°C (350°F). Grease a large baking dish.
- Pat pork chops dry. Season both sides with salt, pepper, and paprika.
- Heat olive oil in a skillet over medium-high heat.
- Sear pork chops 2–3 minutes per side until lightly golden. Set aside.
- Melt butter in a saucepan over medium heat.
- Add onion and cook 3–4 minutes until soft.
- Add garlic and cook 30 seconds.
- Stir in flour and whisk 1 minute.
- Gradually pour in milk and cream, whisking constantly.
- Add salt, pepper, nutmeg, then stir in cheese until melted.
- Layer half of the potatoes in the baking dish.
- Pour some sauce over them.
- Add remaining potatoes and cover with the rest of the sauce.
- Place pork chops on top.
- Cover with foil and bake 45 minutes.
- Remove foil and bake 15–25 minutes more until potatoes are tender and top is golden.
- Let rest 10 minutes before serving to allow sauce to thicken.
