Description

  • ¼ cup fresh orange juice
  • ¼ cup fresh lime juice
  • 4 cloves garlic (minced)
  • 2 tablespoons olive oil
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • fresh cilantro (for garnish)
  • lime wedges (for serving)

Instructions

  1. In a large bowl, combine orange juice, lime juice, garlic, olive oil, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper.
  2. Whisk until well blended and add chicken, ensuring it’s fully coated.
  3. Cover and refrigerate for at least 2 hours, preferably overnight.
  4. Preheat grill to medium-high heat or oven to 425°F (220°C).
  5. For grilling, remove chicken from marinade and place skin-side down on the grill, cooking for 10-12 minutes per side until cooked through.
  6. For roasting, place chicken skin-side up on a baking sheet and roast for 35-40 minutes until golden and crispy.
  7. Let the chicken rest for about 5 minutes after cooking.
  8. Serve hot, garnished with cilantro and lime wedges.
