Description
Pollo Asado is a flavorful Mexican grilled or roasted chicken dish marinated in citrus and spices. It’s perfect for a summer barbecue or a cozy dinner.

- 4 pieces bone-in (skin-on chicken thighs)
- ¼ cup fresh orange juice
- ¼ cup fresh lime juice
- 4 cloves garlic (minced)
- 2 tablespoons olive oil
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 tablespoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ teaspoon cayenne pepper (optional)

- lime wedges (for serving)
Instructions
- In a large bowl, combine orange juice, lime juice, garlic, olive oil, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper.
- Whisk until well blended and add chicken, ensuring it’s fully coated.
- Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat grill to medium-high heat or oven to 425°F (220°C).
- For grilling, remove chicken from marinade and place skin-side down on the grill, cooking for 10-12 minutes per side until cooked through.
- For roasting, place chicken skin-side up on a baking sheet and roast for 35-40 minutes until golden and crispy.
- Let the chicken rest for about 5 minutes after cooking.
- Serve hot, garnished with cilantro and lime wedges.
