Homemade Polish Potato and Cheese Dumplings, known as Pierogi, are a classic dish filled with creamy cheese and mashed potatoes.

- 2 cups mashed potatoes
- 1 cup farmer’s cheese
- 1 egg
- 2 cups all-purpose flour
- 1 teaspoon salt
- ½ cup chopped onions
- 4 tablespoons butter
Instructions
- In a bowl, mix together mashed potatoes, farmer’s cheese, and egg.
- In another bowl, combine flour and salt.
- Gradually add the flour mixture to the potato mixture until a dough forms.
- Roll out the dough and cut into circles.
- Place a spoonful of filling in the center and fold over, sealing the edges.
- Boil dumplings in salted water until they float.
- In a skillet, sauté onions in butter until golden brown. Serve dumplings topped with sautéed onions.
