- 1 pound breakfast sausage
- 6 green onions, chopped (reserve some green tops for garnish)
- 1 red bell pepper, chopped
- 10 large eggs
- 1 1/4 cups heavy cream (substitute whole milk for a lighter result)
- 1 tablespoon Dijon mustard
- 2 teaspoons Tabasco (optional)
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 3 cups sharp cheddar cheese, shredded (divided)
- 1 (30 ounce) package frozen shredded hash browns, thawed
Instructions
- Preheat the oven to 350°F. Spray a 9×13-inch baking dish with nonstick spray.
- Heat a large skillet over medium-high. Add sausage, bell pepper, and the white/light-green parts of green onions. Cook until sausage is browned and vegetables are softened, about 6-8 minutes. Remove from heat and cool slightly.
- In a bowl, whisk eggs with heavy cream, Dijon, Tabasco, salt, black pepper, and half of green onion tops until smooth.
- Stir in 1 1/2 cups cheddar and hash browns into the egg mixture. Mix in the cooled sausage mixture.
- Pour into the prepared baking dish, cover tightly with foil, and bake at 350°F for about 50 minutes.
- Remove foil, sprinkle remaining cheddar on top, increase oven to 400°F, and bake for an additional 10-15 minutes until golden brown and set.
- Let rest for 10 minutes, garnish with green onion tops, slice, and serve.
