Ingredients

  • 3 Kiwis
  • 1/4 cup Fresh Mint Leaves
  • 2 medium Limes
  • 2 tablespoons Honey
  • 1/2 cup Shredded Coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Spread the shredded coconut evenly on a baking sheet, and bake for 5-7 minutes, stirring halfway through.
  2. While the coconut is toasting, cube the ripe fresh pineapple and scoop out the flesh of the kiwis, slicing them into similar-sized chunks. Combine in a large mixing bowl.
  3. Julienne the mint leaves and add to the bowl with the pineapple and kiwi.
  4. In a separate bowl, zest the limes and squeeze out their juice. Mix in the honey to create a dressing.
  5. Pour the dressing over the fruit mixture and gently toss everything together until evenly coated. Cover with plastic wrap and refrigerate.
  6. Before serving, sprinkle toasted coconut on top and serve immediately.
