Cool and Zesty Pineapple Kiwi Salad for Summer Bliss

- 1 medium Fresh Pineapple
- 3 Kiwis
- 1/4 cup Fresh Mint Leaves
- 2 medium Limes
- 2 tablespoons Honey
- 1/2 cup Shredded Coconut
Instructions
- Preheat your oven to 350°F (175°C). Spread the shredded coconut evenly on a baking sheet, and bake for 5-7 minutes, stirring halfway through.
- While the coconut is toasting, cube the ripe fresh pineapple and scoop out the flesh of the kiwis, slicing them into similar-sized chunks. Combine in a large mixing bowl.
- Julienne the mint leaves and add to the bowl with the pineapple and kiwi.
- In a separate bowl, zest the limes and squeeze out their juice. Mix in the honey to create a dressing.
- Pour the dressing over the fruit mixture and gently toss everything together until evenly coated. Cover with plastic wrap and refrigerate.
- Before serving, sprinkle toasted coconut on top and serve immediately.
