Description
Pineapple-banana muffins made with ripe bananas and crushed pineapple are an easy, tropical-inspired bake that comes together quickly and delivers a soft, bright-flavored bite.

- 1/2 cup ripe mashed banana
- 1/2 cup brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 3/4 cup crushed pineapple
- 1 cup self-rising flour
- 1 teaspoon cinnamon
- 1/3 cup vegetable oil
Instructions
- Preheat oven to 350°F. Line a 12-cup muffin tin with liners or lightly grease.
- In a large bowl, whisk together the eggs, mashed banana, crushed pineapple, sugar, oil, and vanilla until smooth.
- Add the flour, baking powder, baking soda, salt, and cinnamon directly on top of the wet ingredients. Gently stir just until combined. Do not overmix.
- Divide batter evenly into 12 muffin cups, filling each about 3/4 full.
- Bake for 18 to 22 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
