- 4 boneless (skinless chicken breasts (about 700–800g))
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp garlic powder
- ½ tsp paprika
- 1 cup pineapple chunks (fresh or canned, drained)
- ½ cup pineapple juice
- ¼ cup soy sauce
- ¼ cup brown sugar (or honey)
- 2 tbsp ketchup
- 1 tbsp apple cider vinegar (or rice vinegar)
- 2 cloves garlic (minced)
- 1 tsp fresh grated ginger (optional)
- 1 tbsp cornstarch + 1 tbsp water (for thickening)
- Sliced green onions
- Sesame seeds
Instructions
- Preheat the Oven
- Set oven to 375°F (190°C).
- Lightly grease a baking dish.
- Season the Chicken
- Place chicken in the dish.
- Season with salt, pepper, garlic powder, and paprika.
- Make the Pineapple Sauce
- In a bowl, whisk together:
- Pineapple juice
- Soy sauce
- Brown sugar
- Ketchup
- Vinegar
- Garlic
- Ginger (if using)
- Add Pineapple
- Scatter pineapple chunks over the chicken.
- Pour the sauce evenly on top.
- Bake
- Cover loosely with foil and bake for 20 minutes.
- Remove foil and bake 10–15 minutes more until chicken is cooked through (internal temp 165°F / 74°C).
- Thicken the Sauce (Optional)
- Transfer sauce to a small pan.
- Stir in the cornstarch slurry and simmer 1–2 minutes until thickened.
- Pour back over chicken.
- Serve
- Garnish with green onions or sesame seeds if desired.
- Serve hot.
