Ingredients

  • 4 boneless (skinless chicken breasts (about 700–800g))
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp paprika
  • 1 cup pineapple chunks (fresh or canned, drained)
  • ½ cup pineapple juice
  • ¼ cup soy sauce
  • ¼ cup brown sugar (or honey)
  • 2 tbsp ketchup
  • 1 tbsp apple cider vinegar (or rice vinegar)
  • 2 cloves garlic (minced)
  • 1 tsp fresh grated ginger (optional)
  • 1 tbsp cornstarch + 1 tbsp water (for thickening)
  • Sliced green onions
  • Sesame seeds

Instructions

  1. Preheat the Oven
  2. Set oven to 375°F (190°C).
  3. Lightly grease a baking dish.
  4. Season the Chicken
  5. Place chicken in the dish.
  6. Season with salt, pepper, garlic powder, and paprika.
  7. Make the Pineapple Sauce
  8. In a bowl, whisk together:
  9. Pineapple juice
  10. Soy sauce
  11. Brown sugar
  12. Ketchup
  13. Vinegar
  14. Garlic
  15. Ginger (if using)
  16. Add Pineapple
  17. Scatter pineapple chunks over the chicken.
  18. Pour the sauce evenly on top.
  19. Bake
  20. Cover loosely with foil and bake for 20 minutes.
  21. Remove foil and bake 10–15 minutes more until chicken is cooked through (internal temp 165°F / 74°C).
  22. Thicken the Sauce (Optional)
  23. Transfer sauce to a small pan.
  24. Stir in the cornstarch slurry and simmer 1–2 minutes until thickened.
  25. Pour back over chicken.
  26. Serve
  27. Garnish with green onions or sesame seeds if desired.
  28. Serve hot.
