Ingredients
- Jumbo Pasta Shells
- Ground Beef
- Bell Peppers (green and red)
- Onion
- Cream Cheese
- Cheddar Cheese
- Beef Broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, bring salted water to a boil. Add the jumbo shells and cook according to the package instructions until al dente. Drain and set aside.
- In a large skillet over medium heat, add a splash of oil. Sauté the chopped onions and bell peppers until they’re soft, about 5-7 minutes.
- Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned and fully cooked, breaking it apart with a spatula. Drain any excess fat.
- Reduce the heat to low. Add the cream cheese and beef broth to the skillet, stirring until the cream cheese is melted and well combined with the meat and veggies. Season with salt and pepper to taste.
- Using a spoon, fill each cooked shell with the beef and cheese mixture, placing them in a greased baking dish as you go.
- Once all the shells are stuffed, sprinkle shredded cheddar cheese over the top.
- Cover the baking dish with foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
