  • 1 lb sirloin steak, thinly sliced
  • 4 green bell peppers, cut in half and seeded
  • 1 cup mushrooms, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, thinly sliced
  • 1 yellow onion, thinly sliced
  • 2 tbsp avocado oil
  • 1 tbsp Worcestershire sauce or coconut aminos
  • Salt and pepper to taste
  • 1/2 cup Mac’s Awesome Sauce or mozzarella or dairy-free cheese
  • Parsley for garnish
  • 1 cup mayo or Greek yogurt if not dairy-free
  • 2 tbsp finely chopped onions
  • 2 tsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Cut the tops off the green bell peppers and remove seeds and membranes. Place them upright in a baking dish and bake unstuffed for 10 minutes to soften.
  2. Alternatively, boil peppers in a large pot of water for 3-4 minutes until slightly softened. Remove with tongs and drain on paper towels. Place in a baking dish upright.
  3. Thinly slice the onion and sirloin steak against the grain. Julienne the red bell pepper and slice the mushrooms, ensuring all are clean and prepped.
  4. Heat a drizzle of olive oil in a large skillet over medium-high heat. Add sirloin strips and cook about 2-3 minutes per side until browned. Season with salt and pepper, then remove steak from skillet and set aside.
  5. Add 1 tbsp olive oil to the hot skillet. Sauté minced garlic, mushrooms, red peppers, and onions for 4-5 minutes until tender. Return steak to skillet, add Worcestershire sauce or coconut aminos, and cook together for 1-2 minutes.
  6. In a small bowl, combine mayo or Greek yogurt, finely chopped onions, Worcestershire sauce, salt, and pepper. Mix thoroughly to create Mac’s Awesome Sauce.
  7. Spoon a generous amount of the steak and vegetable mixture into each bell pepper half. Top each with 2 tablespoons of Mac’s Awesome Sauce or your choice of cheese.
  8. Place stuffed peppers back into the oven and bake for 15-20 minutes until cheese is melted, bubbly, and peppers are tender.
  9. Remove from oven, garnish with chopped parsley, and serve warm.
