Pesto Bruschetta Chicken is a delicious low-carb dish perfect for summer gatherings.

- 2 large Chicken Breasts (Pound them for even cooking.)
- 2 tablespoons Olive Oil (Use extra virgin for enhanced taste.)
- 1 teaspoon Garlic Powder (Fresh minced garlic can be substituted.)
- 1 teaspoon Italian Seasoning (Substitute with dried oregano and thyme if needed.)
- 1 teaspoon Salt (Adjust to taste.)
- 1 teaspoon Black Pepper (Adjust according to your preference.)
- 8 slices Galbani Thin Sliced Fresh Mozzarella (Shredded mozzarella works in a pinch.)
- 1 cup Basil Pesto (Use homemade or store-bought.)
- 2 tablespoons Balsamic Glaze (Can be substituted with balsamic vinegar.)
- 1 whole Lemon (Can substitute lime.)
- 2 cups Tomatoes (diced) (Roma or vine-ripened tomatoes recommended.)
- 0.5 cups Basil Leaves (Dried basil can be used if fresh isn’t available.)
- 1 clove Garlic Clove (Garlic powder is a good backup.)
- 1 tablespoon Extra Virgin Olive Oil (Quality matters.)
- 1 teaspoon Red Pepper Flakes (Adjust to taste.)
Instructions
- In a bowl, combine diced tomatoes, fresh basil, minced garlic, extra virgin olive oil, red pepper flakes, and a pinch of salt and pepper. Mix gently and set aside to let the flavors meld.
- Rub both sides of the large chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and black pepper.
- In a skillet, heat some olive oil over medium heat. Cook the chicken breasts for 5-7 minutes on each side, or until they reach an internal temperature of 165°F. Squeeze half a lemon over the chicken halfway through.
- Once the chicken is cooked through, reduce the heat and layer each piece with the thin sliced fresh mozzarella. Cover the skillet to allow the cheese to melt.
- Remove the skillet from heat and layer the chicken with basil pesto followed by the bruschetta topping. Drizzle balsamic glaze over the top.
