  • 8 slices Galbani Thin Sliced Fresh Mozzarella (Shredded mozzarella works in a pinch.)
  • 1 cup Basil Pesto (Use homemade or store-bought.)
  • 2 tablespoons Balsamic Glaze (Can be substituted with balsamic vinegar.)
  • 1 whole Lemon (Can substitute lime.)
  • 2 cups Tomatoes (diced) (Roma or vine-ripened tomatoes recommended.)
  • 0.5 cups Basil Leaves (Dried basil can be used if fresh isn’t available.)

Instructions

  1. In a bowl, combine diced tomatoes, fresh basil, minced garlic, extra virgin olive oil, red pepper flakes, and a pinch of salt and pepper. Mix gently and set aside to let the flavors meld.
  2. Rub both sides of the large chicken breasts with olive oil, garlic powder, Italian seasoning, salt, and black pepper.
  3. In a skillet, heat some olive oil over medium heat. Cook the chicken breasts for 5-7 minutes on each side, or until they reach an internal temperature of 165°F. Squeeze half a lemon over the chicken halfway through.
  4. Once the chicken is cooked through, reduce the heat and layer each piece with the thin sliced fresh mozzarella. Cover the skillet to allow the cheese to melt.
  5. Remove the skillet from heat and layer the chicken with basil pesto followed by the bruschetta topping. Drizzle balsamic glaze over the top.
