Description
Creamy, sweet, and just a little spicy, these pepper jelly pinwheels are an easy no-bake appetizer that comes together in minutes.

- 8 oz of cream cheese (room temp)
- 1/2 cup of pepper jelly
- 1 tsp salt
- 1 tsp pepper
- 1 tsp onion powder
- 4 large tortillas
- 1 cup of shredded Colby Jack
- 1 cup of crumbled bacon
- 1/2 cup of chopped scallions
Instructions
- In a small bowl, combine the cream cheese and pepper jelly. Use a hand mixer to beat until smooth and creamy. Add the salt, pepper, and onion powder, then mix again until well blended.
- Place one tortilla on a clean work surface. Spread about two spoonfuls of the cream cheese mixture evenly over the tortilla. Sprinkle with shredded cheese, followed by a small pinch of bacon and scallions.
- Starting from one edge, roll the tortilla into a very tight log. Wrap it tightly in plastic wrap to hold its shape. Repeat with the remaining tortillas, then refrigerate for 20 minutes to firm up.
- Remove the chilled tortillas from the refrigerator and carefully unwrap them, keeping the logs tightly rolled. Trim off the ends where there is mostly tortilla.
- Slice each log into 1 to 1½-inch pieces to create pinwheels. Serve and enjoy.
