Ingredients

  • 1 (14-oz) package puff pastry, thawed
  • 1 (8-oz) block cream cheese, cold
  • ½ cup pepper jelly (choose mild, medium, or hot)
  • Cooking spray (for greasing muffin pans)
  • Fresh thyme leaves (optional, for garnish)

Instructions

  1. Preheat to 375°F (190°C) and grease two 24-cup mini muffin pans with cooking spray.
  2. Unfold puff pastry and cut into 24 squares. Press each into the prepared muffin cups.
  3. Bake for 12 minutes or until lightly golden and puffed. Remove from oven and cool slightly.
  4. Cut cream cheese into 24 small cubes. Press one cube into each pastry cup and top with 1 tsp pepper jelly.
  5. Return to oven for 8–10 minutes, until pastry is golden and cream cheese softens.
  6. Cool for 10 minutes, garnish with thyme if desired, and serve warm or at room temperature.
