  • ½ cup Panko breadcrumbs
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon pepper (or to taste)
  • 2 large eggs
  • 4 boneless skinless chicken breasts (about 6 ounces each)
  • 2 tablespoons honey
  • 2 tablespoons mayonnaise
  • 2 tablespoons Dijon mustard
  • 2 teaspoons white vinegar

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper, then place an oven-safe cooling rack on top and spray it lightly with cooking spray.
  2. In a food processor, combine the pecans, Panko breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper. Pulse a few times until the mixture resembles fine crumbs. Transfer this mixture into a large Ziploc bag.
  3. Place the chicken breasts on a cutting board and cover them with plastic wrap or parchment paper. Gently pound the breasts until they reach an even thickness of about ¼-inch.
  4. Beat the eggs in a shallow bowl. Dip each chicken breast into the egg wash, then place it inside the Ziploc bag with the pecan breadcrumb mix. Seal the bag and shake gently to coat the chicken thoroughly. Remove the breast and place it on the prepared baking rack.
  5. Lightly spray the coated chicken breasts with cooking spray. Place the baking sheet in the preheated oven and bake for approximately 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  6. While the chicken bakes, whisk together honey, mayonnaise, Dijon mustard, and white vinegar in a small bowl until smooth.
  7. Once the chicken is baked, drizzle the honey mustard sauce over each breast or serve it on the side for dipping.
