  • 0.25 cups Unsalted butter
  • 0.75 cups Light brown sugar
  • 0.5 cups Creamy peanut butter
  • 2 Large Eggs
  • 0.5 teaspoon Vanilla extract
  • 0.25 cups Sour cream
  • 1.5 cups Mashed banana
  • 0.50.67 cups Chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9″ x 5″ loaf pan by greasing it.
  2. Whisk together 1 ¾ cups of all-purpose flour, 1 teaspoon of ground cinnamon, 1 teaspoon of baking powder, ½ teaspoon of baking soda, and ½ teaspoon of salt.
  3. Beat ¼ cup of softened unsalted butter, ¾ cup of light brown sugar, and ½ cup of creamy peanut butter until fluffy. Add the 2 large eggs one at a time, mixing well after each.
  4. Combine the flour mixture with the peanut butter mixture, alternating adding the flour in three portions with ¼ cup of sour cream in two portions.
  5. Fold in 1 ½ cups of mashed bananas and optional chopped nuts.
  6. Spread the batter in your prepared pan. Bake for 50 to 55 minutes, until golden brown and a toothpick comes out clean.
  7. Cool in the pan on a wire rack for 10 minutes, then transfer to a wire rack to cool completely.
