- 3 cups Peaches (Use fresh, ripe peaches or canned, drained well.)
- 1 cup Raspberries (Can substitute with blackberries or blueberries.)
- 1/4 cup Granulated Sugar (Adjust based on fruit sweetness.)
- 1/4 teaspoon Salt (Balances sweetness.)
Instructions
- Preheat your oven to 350°F (180°C) and line an 8-inch square pan with parchment paper.
- In a mixing bowl, combine flour, oats, brown sugar, and almonds. Cut in the butter until coarse crumbs form.
- Press half of the crumble mixture into the bottom of the prepared pan and bake for 15 minutes.
- Mix the peach slices and raspberries with lemon juice and vanilla extract for the filling.
- Combine the remaining flour, granulated sugar, and salt, and sprinkle over the fruit filling.
- Layer the fruit mixture over the baked crust, then sprinkle the remaining crumble on top.
- Bake the assembled bars for 35 to 40 minutes until golden brown.
- Let the bars cool in the pan for about 30 minutes before slicing.
