  • 2 jalapeño peppers, finely diced (seeds removed for mild heat, keep some for extra spice)
  • 1 red bell pepper, finely diced
  • 5 cups granulated sugar
  • 1/3 cup apple cider vinegar
  • 2 tablespoons fresh lemon juice
  • 1 (1.75 oz) package powdered fruit pectin

Instructions

  1. Prepare the fruit: Peel and finely chop the peaches. Dice the jalapeños and red bell pepper very small for a smooth, glossy jam texture.
  2. Combine base ingredients: In a large heavy-bottom pot, combine peaches, jalapeños, red bell pepper, apple cider vinegar, lemon juice, and pectin. Stir thoroughly until well mixed.
  3. Bring to a hard boil: Place the pot over high heat and bring the mixture to a full rolling boil, stirring constantly to avoid sticking.
  4. Add sugar: Add all the granulated sugar at once, stirring continuously until fully dissolved. Return to a full rolling boil for proper setting.
  5. Cook to set: Boil hard for exactly 2 minutes, stirring nonstop to prevent scorching. The jam will turn glossy and slightly translucent.
  6. Test the jam: Spoon a small amount onto a cold plate and push it gently with your finger. If it wrinkles and holds its shape, it’s ready.
  7. Jar and cool: Remove from heat and ladle the hot jam into clean jars. Let cool completely to thicken before sealing or refrigerating.
