Description

This Pea Bruschetta is a vibrant spring appetizer featuring creamy pea topping on toasted ciabatta, perfect for gatherings.


Ingredients

  • 1 cup Frozen Peas (defrosted)
  • 1/4 cup Pea Shoots (optional garnish)
  • 1/4 cup Grated Parmesan Cheese
  • 2 tbsp Olive Oil
  • 1 tbsp Lemon Juice (fresh)
  • 1/2 clove Garlic (use half for topping, rub other half on toast)
  • 1 loaf Ciabatta Bread (sliced into 1-inch thick pieces)
  • to taste Black Pepper
  • to drizzle tbsp Extra Virgin Olive Oil (for added richness)

Instructions

  1. In a food processor, blend the defrosted peas, optional pea shoots, grated Parmesan, two tablespoons of olive oil, lemon juice, half a garlic clove, and a pinch of salt and pepper. Pulse until you achieve a rough paste.
  2. Preheat your broiler to high heat. Slice ciabatta bread and place on a baking sheet. Brush slices generously with olive oil, then broil for 2-3 minutes per side until golden brown.
  3. Rub the remaining half of the garlic clove over the surface of each toast.
  4. Spread the pea topping over each slice, sprinkle with additional grated Parmesan and lemon zest, garnish with pea shoots, drizzle with extra virgin olive oil, and finish with black pepper.
