Ingredients

  • 1 pound ground beef
  • 8 slices Swiss cheese
  • 8 slices rye bread (or your favorite sandwich bread)
  • 4 tablespoons mayonnaise
  • 2 medium onions (thinly sliced)
  • 4 tablespoons butter (divided)
  • Salt and pepper (to taste)

Instructions

  1. Melt 2 tablespoons of butter in a large skillet over medium heat. Add the thinly sliced onions and cook slowly for 20 to 25 minutes, stirring occasionally, until they turn a deep golden brown color. Adjust the heat to medium-low as needed to prevent burning. Once caramelized, transfer the onions to a plate and wipe the skillet clean.
  2. Season the ground beef with salt and pepper to taste. Shape the beef into 4 equal patties approximately the size of your bread slices.
  3. Place the patties in the skillet over medium-high heat and cook for about 3 minutes per side until browned and cooked through. If needed, cook them in batches to avoid overcrowding. Transfer the cooked patties to a plate and wipe the skillet clean again.
  4. Add 1 tablespoon of butter to the skillet and melt it over medium heat. Place 4 slices of bread into the skillet and toast until golden brown. Remove 2 slices and flip the remaining two slices on the skillet.
  5. On the sliced bread still in the skillet, place a slice of Swiss cheese, then a cooked patty, followed by caramelized onions and another slice of cheese. Spread one tablespoon of mayonnaise on the untoasted sides of the remaining 2 bread slices and place the mayo side down over the assembled sandwiches.
  6. Turn the heat down to medium-low and cook the sandwiches for 3 to 4 minutes on each side, flipping halfway through, until the bread is toasted to a golden crisp and the cheese is melted.
  7. Remove the finished sandwiches from the skillet and repeat the toasting and assembling process with the remaining bread, patties, onions, and cheese.
  8. Slice the sandwiches in half and serve immediately, ideally with chips or French fries for a classic pairing.
