Description

Juicy chicken breasts coated in crispy Parmesan and panko, then smothered in a rich, creamy garlic sauce.


Ingredients

  • 4 chicken breasts (small to medium, or 2 large halved)
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • 1/2 cup Parmesan cheese (grated, for coating)
  • 1/2 cup panko breadcrumbs
  • 34 cloves garlic (minced)
  • 1 cup heavy cream or light cream
  • 1 tablespoon Italian seasoning or oregano
  • 1/2 cup Parmesan cheese (grated, for sauce)
  • 1 cup spinach (chopped, optional)

Instructions

  1. Preheat a non-stick skillet over medium heat. Season chicken breasts with salt and pepper on both sides.
  2. In a shallow bowl, combine 1/2 cup grated Parmesan cheese and 1/2 cup panko breadcrumbs. Dip each chicken breast into the mixture, pressing firmly for an even coating.
  3. Drizzle 2 tablespoons olive oil into the skillet. Place coated chicken breasts in the pan with space between them.
  4. Cook chicken for 5-7 minutes on the first side. Flip and cook another 5-7 minutes until golden brown and internal temperature reaches 165°F. Remove chicken and set aside.
  5. In the same skillet, add minced garlic and sauté for 1 minute until fragrant.
  6. Pour in the cream while stirring, then add Italian seasoning or oregano. Stir in 1/2 cup grated Parmesan cheese until melted and smooth.
  7. Return the cooked chicken to the skillet with the sauce. Simmer for 2-3 minutes, spooning sauce over the chicken.
  8. If using spinach, stir it into the sauce and let it wilt for about 1 minute. Adjust seasoning with salt and pepper if needed. Serve hot.
