Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1.5 pounds baby Yukon Gold or red potatoes, halved
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • ⅓ cup grated Parmesan cheese
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Pat the chicken dry using paper towels. In a small bowl, combine Italian seasoning, smoked paprika, salt, and black pepper. Rub the chicken breasts with olive oil, then coat with the seasoning mixture.
  3. In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and pepper until coated.
  4. Arrange the seasoned chicken on one side of the baking sheet. Spread the potatoes in a single layer on the other side.
  5. Place the baking sheet in the oven and roast for 25-30 minutes. Flip the potatoes halfway through cooking.
  6. During the last 5 minutes, sprinkle additional Parmesan cheese over the chicken and potatoes. Switch your oven to broil briefly.
  7. Remove the baking sheet, garnish with chopped fresh parsley, and serve hot.
