A simple and flavorful one-pan dinner featuring tender Parmesan-coated chicken breasts paired with garlicky roasted baby potatoes.

- 4 boneless skinless chicken breasts (or thighs)
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon olive oil
- 1.5 pounds baby Yukon Gold or red potatoes, halved
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- ⅓ cup grated Parmesan cheese
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
- Pat the chicken dry using paper towels. In a small bowl, combine Italian seasoning, smoked paprika, salt, and black pepper. Rub the chicken breasts with olive oil, then coat with the seasoning mixture.
- In a large bowl, toss the halved baby potatoes with olive oil, minced garlic, grated Parmesan cheese, salt, and pepper until coated.
- Arrange the seasoned chicken on one side of the baking sheet. Spread the potatoes in a single layer on the other side.
- Place the baking sheet in the oven and roast for 25-30 minutes. Flip the potatoes halfway through cooking.
- During the last 5 minutes, sprinkle additional Parmesan cheese over the chicken and potatoes. Switch your oven to broil briefly.
- Remove the baking sheet, garnish with chopped fresh parsley, and serve hot.
Notes
- Check the chicken’s internal temperature with a meat thermometer; it should reach 165°F (74°C).
- Use fresh parsley for garnish to enhance flavor.
